Mustang Monument Wild Horse Eco-Resort in Northeastern Nevada has announced that well-known chef and culinary personality Robert McGrath will serve as Executive Chef of the resort when it opens to invited guests in June 2013 and to the public for summer of 2014. The nationally-known chef who has been on the culinary scene for more than two decades was born in Texas and studied in France.

American Western Cuisine with Native American and Hispanic influences will be highlighted in unique dishes such as New Mexico Fondue Pot with Lamb Chops, Granny Smith apples, Squaw Bread with pepitas, and pepper jack cheese, Empanadas; with sweet potatoes, chile-spiced shrimp, Bufala mozzarella, and Colorado corn cream, and Wood-Roasted Beets, with Mascarpone sorbet, squash blossom, green garlic and pine nuts. Meals will be smoked, roasted and grilled, and served outdoors.

McGrath won the prestigious James Beard “Best Chef in America: Southwest” in 2001. He has been nominated seven times. Presently, Chef McGrath serves as the host of the Emmy-award winning “Check Please! Arizona,” a PBS television show that focus on restaurant reviews.

“Our goal was to identify a five-star chef who would create cuisine for the resort that would be a key element of the luxury experience at Mustang Monument,” said Madeleine Pickens, philanthropist, business woman and founder of the Mustang Monument Eco-Resort. “Chef McGrath is well known for his culinary expertise, including using seasonal ingredients repurposed with a Southwest twist, and we are honored to have him with us.”

A long-time resident of the Southwest, he is also a member of Arizona’s Culinary Hall of Fame. Chef McGrath is author of “American Western Cooking from Roaring Fork” and has appeared on numerous national television programs include The Today Show, Good Morning America and Lifestyles of the Rich and Famous.

“I’ve been fortunate in my career to have the opportunity to work in many amazing situations. Mustang Monument is a new-style luxury resort that focuses on an important cause: Saving Wild Mustangs,” said McGrath. “At this establishment, my goal is provide an unforgettable culinary experience and good energy in a totally unique setting.”

Food and Wine magazine designated McGrath as one of the “Ten Best Chefs in America” in 1988. Esquire magazine selected his restaurant in the Four Seasons Hotel-Houston as “One of the Best New Restaurants in America.”
